春日食春味,又到了吃青团的季节啦。今年又去了去年打野的地方采了一些新鲜艾草,今年的艾草采的更早,更鲜嫩,所以做出来的青团也更翠绿
青团皮子还是沿用去年自用的青团配方,只是这次加倍做了,做了3种口味的,分别是咸蛋黄肉松味的、椰香紫米、流沙花生黑芝麻。做出来的青团依然软糯香甜,放三天也不会变硬‼️
用料中的青团皮用量是24个的量,每种口味做了8个,馅料会️剩余,留着下次再做

一次解锁3种口味的艾草青团,放三天也不会硬‼️的做法
去年做了咸口笋丁香干肉馅咸口的青团,
- 弄好的馅分别搓成25克/个的圆球,每个口味8个。放到冰箱冷藏活冷冻,花生芝麻馅冷冻会更方便后面包
- 下面来准备青团皮:新鲜艾草叶焯水后加适量水和一丢丢小苏打,打成艾草泥
- 澄面中一次性加入烧开的开水
- 搅成半透明的糊状
- 糯米粉中加入猪油和艾草泥
- 先揉均匀
- 再加入上面步骤5中的澄面糊
- 一起和成面团
- 和好的面团分成45克/个的剂子,共24个

- 紫米馅的我还单独用模具压了小花花
- 点缀在顶部,更加有春天的气息啦
- 包好的青团,底部垫上蒸纸,水开后上锅蒸10分钟,蒸熟后给青团刷一层玉米油,可以保色和防粘
