今天要分享的这道家常土豆饼，是我家周末早午餐的常客。金黄油亮的外表下，藏着软糯香甜的内心，一口咬下去，先是酥脆的外皮"咔嚓"作响，接着是土豆泥的绵密口感，混合着火腿的咸香和葱花的清新，让人欲罢不能。最妙的是做法简单，食材也都是厨房常备，特别适合忙碌的早晨。
做土豆饼，选对土豆是关键。新鲜上市的黄心土豆最适合，淀粉含量高，做出来的饼子更加绵软。我常去菜市场挑那些表皮光滑、没有发芽的，大小均匀的中等个头土豆，这样的土豆更容易煮熟且口感一致。记得有一次贪便宜买了袋发芽土豆，结果做出来的饼子发苦，全家人都皱眉头，从此我再也不敢马虎。
准备食材：土豆、鸡蛋、火腿、葱花、面粉、盐、香油
具体做法：1、 土豆洗净后连皮煮熟，这个步骤很关键。我试过去皮煮和带皮煮两种方法，发现带皮煮的土豆水分更少，香味更浓。水开后转中小火煮15分钟，用筷子能轻松穿透即可。捞出后立即过冷水，这样皮会自然裂开，轻松剥下。
剥好皮的土豆趁热压成泥，我更喜欢保留些小颗粒，吃起来更有层次感。这时候满厨房都是土豆的香甜气息，女儿总会跑进来偷吃一勺。
2、火腿切成绿豆大小的丁，葱花也切小丁，记得有次用老葱，结果做出来的饼子总有嚼不烂的葱丝，影响口感。胡萝卜切小丁焯水捞出备用。
将土豆泥移入大碗，打入鸡蛋，先搅拌均匀。接着加入火腿丁、葱花，撒入食盐，淋上香油。最后分次加入面粉，边加边搅拌，直到能揉成团又不粘手的状态。这里面粉量要灵活调整，土豆含水量不同需要适当增减。
3、手上抹少许油，取适量面团揉圆再压扁，厚度保持在1cm左右最好。太厚不易熟透，太薄又容易焦。我习惯做成直径8cm左右的小饼，一口一个刚刚好。
4、平底锅倒少量油，烧至五成热时放入土豆饼。关键是要用中小火慢煎，我通常先用中火定型，再转小火焖煎。大约3分钟翻面，直到两面金黄酥脆。记得有次着急用大火，结果外焦里生，白白浪费了好食材。

想要土豆饼更酥脆？可以在表面裹层面包糠；喜欢奶香的，加些芝士碎进去；想吃得更健康，可以把火腿换成玉米粒和胡萝卜丁。我最近发现加入少许咖喱粉，别有一番异国风味，孩子们特别喜欢。
