奥尔良鸡肉芝士包的做法
- 制作馅料:奥尔良鸡肉撕成小条,加入马苏里拉奶酪碎、沙拉酱和少许黑胡椒粉混合均匀。
- 面团材料后油法揉至出膜,此款餐包揉至扩展即可。
- 直接分割成5份,约94克/个,滚圆松弛10分钟。
- 面团擀开成直径约15cm的圆形面片。
- 翻面后放入50克馅料。
- 像包包子一样包起来。
- 收口处捏紧。
- 翻面整理一下形状,完成一个面包坯的整形。依次做好5份。

- 面团表面喷水,沾满芝士粉。
- 将面团摆放在烤盘上。
- 温暖湿润处(温度36度,湿度75%)发酵至1.5倍大,用剪刀在顶部剪开一个十字口。
- 放入预热好的烤箱中层,上下火180度20分钟。表面上色满意后加盖锡纸。
小贴士
1、奥尔良鸡肉可以买现成的,也可以自己用鸡胸肉或鸡腿肉加奥尔良调料制作。如果是用自己制作的奥尔良鸡肉,务必记得彻底放凉后再加入奶酪碎和沙拉酱。
2、表面装饰用的是帕玛森干酪粉,味道比较浓郁。如果不喜欢太厚重的奶酪味,可以不用干酪粉或者改用白芝麻装饰。
