韭菜

炒合菜(高纤低脂餐)的做法

  1. 红薯粉条,用热水泡软,泡软后剪短;



  1. 豆芽清净,韭菜切长段;



  1. 鸡蛋打散,放入少许盐调味,热锅凉油,煎好盛出备用;



  1. 煎鸡蛋的锅不用洗,加入少许底油,爆香蒜片和干辣椒段;(辣椒也可以不放)



  1. 下入豆芽翻炒30秒;



  1. 下入红薯粉条和豆芽翻炒均匀;



  1. 下入鸡蛋,加入一勺生抽,半勺老抽,一勺料酒,半茶匙糖,半茶匙鸡精,少许胡椒粉,翻炒均匀;



  1. 豆芽差不多断生的时候,加入韭菜,再加入一勺蚝油,及少许盐调整咸淡,翻炒30秒出锅;



  1. 摆盘,香气扑鼻。



小贴士

此菜不宜炒太久,容易出水,断生即可出锅;为避免出水,盐最后放。
