今天用妈妈寄过来的“妈妈牌”腊肉和妈妈自己晾晒的萝卜干,搭配蒜末仔姜蒜苗小米辣干辣椒炒一盘下饭菜!太好吃了^ω^
用料

干辣椒

小米椒

生抽

蚝油
1勺
老抽
1小勺
米酒
2勺
鸡精

腊肉炒萝卜干|忒费米饭的做法
- 拿了一条“妈妈牌”腊肉,我喜欢先洗一下表面再上笼蒸熟备用。
- 萝卜干提前浸泡变软再挤干水分,切成小碎丁;
蒸熟的腊肉切成片;
蒜苗叶和蒜苗白切粒分开放;
仔姜切碎+大蒜拍一下切碎;
干辣椒剪成小段+小米辣切粒。
- 平底锅不放油,倒入萝卜干,干煸一会儿去除水分,盛出备用
- 锅中放少许油,把腊肉倒入煸炒出香味表面微焦的感觉。
- 倒入蒜末和仔姜以及干辣椒,继续煸炒均匀
- 再倒入萝卜干
- 翻炒均匀
- 加入老抽,蚝油,生抽,米酒

- 煮一会
- 待汁水快收干时,放入蒜苗白和小米辣翻炒一下
- 加鸡精调味,最后撒上蒜苗叶,关火,翻炒均匀即可
- 盛盘端上桌,太下饭了!

小贴士
调味不是绝对,根据腊肉和萝卜干的咸度来调味。
萝卜干是用白萝卜晾晒干的。
