刀鱼炖白菜的做法
- 葱姜蒜切好,留一部分葱花
- 白菜叶子和白菜帮分开
- 白菜帮用刀斜切成片
- 刀鱼切段,去除内脏,洗干净
- 用刀切几道
- 葱,姜,料酒一大勺,拌均匀腌制十分钟左右
- 腌制好的刀鱼用厨房纸吸干水分,锅内适量油,放入刀鱼段煎至两面金黄盛出备用,我的锅耽误了颜值,下次做再把图片换一下

- 另起锅,少许猪油(猪油更香,换成五花肉也行),放入八角和干辣椒炒香
- 放入葱姜炒香
- 放入白菜帮,炒至断生
- 放入刀鱼,一勺香醋,一勺料酒,一勺生抽,一勺老抽
- 加入凉水煮开,放一小勺糖,适量盐,一小勺白胡椒粉,盖盖子煮5分钟
- 放入白菜叶,小伙再焖煮一分钟即可(如果放粉条,提前泡软,开水煮熟捞出,一点老抽拌匀,跟白菜叶一起放进锅里)
- 配米饭开吃吧

1.煎刀鱼之前一定要用厨房纸吸干水分
2.刀鱼不要煎的太过,免得硬不好吃
